Baby Girl Tries It: The Disney Princess Cookbook

These delicious sweet potato coins come from The Disney Princess Cookbook.

You'll need sweet potatoes, salt (optional), pepper (optional), cookie cutters (if you want fun shapes), and/or other seasonings (again, optional)
First, peel and slice the potatoes. They should be around 1/4 an inch or less thick.  Have an adult do the cutting.
If you want fun shapes, follow this step.  If not, you can skip this step.  Find cookie cutters or sandwich cutters. Center the cutters on the sweet potato slice and gently push down. Pull up the cutter and take out the shape.
Coat them in olive oil by putting them in a bowl with the olive oil and stir well.
Place on a pan and put on seasonings. Bake at 400F for 10 minutes, flip, and bake for another 10 minutes.  If not fully baked, bake for another 2-4 minutes.  Add more seasonings after you flip.

  1. Hi!! Im trying to find the brand/type/name of the cutter you used. It looks like one i used to have but lost the interchangeable cutters that go onto the top but then you push the botton at the top to pop whats been cut out?? Do you recall where you got yours from?

    1. The brand is Myco Collection. (I think it's actually "My Collection" but the box says Myco.) It's called the "Mini Sandwich Maker." We got it as a gift, so I'm not sure where it came from.
